The Tarte Flambee recipe

If you are tired of eating pizza and are looking for something similar but that taste radically different then you have to try the Tarte Flambee (Flammekueche). this Franco- german recipe is perfect for a quick snack and can be served as an aperitif for your guest with a nice glass white wine from Alsace. It is really a recipe that anyone should try at least once as it really taste special.

The recipe

Think of it as a Franco-German Pizza. In essence it is a super thin dough spread out thinly which is then covered with a base made out of creme fraiche, fromage blanc (cottage cheese) salt, pepper and nutmeg. You then add various topping to your liking (in this case onion and bacon). Today we look at the base recipe but you can play around with the toppings like a pizza. it’s absolutely fun to make and is open for innovation.

Ingredients for the Dough:

  • 250 grams of flour
  • 100 ml of water
  • 25 ml of oil
  • 2 grams of salt

For the Topping:

  • 2 sweet onions
  • 200 grams of streaky bacon
  • 200 ml of creme fraiche
  • 100 ml of cottage cheese
  • a grind of black pepper and a few pinches of nutmeg (seasoning)
